Ullage
Stock on hand that cannot be sold as it is, and last period's to count against.
Ullage is stock still on hand that cannot be sold as it is: a damaged bottle, the end of a keg. Count it in the Ullage column of the count pad.
It is part of the closing stock like any other figure, but it is marked as ullage on the count check, with a small u: 0.7u is seven tenths of a bottle of ullage.
Last period's ullage
While you count, the foot of the pad shows Ullage on hand last period for that item, to count against. It comes from the last closed period, and works without signal. It is there for reference only, and changes nothing in this period's count.
