Food stocks

A kitchen counted item by item at cost, its delivery notes and weekly takings, judged by its GP against a target.

A kitchen is stocktaken differently from a bar. Nothing is sold item by item, so there are no selling prices and no till. The kitchen is counted at cost, its delivery notes are typed as totals, its takings are typed week by week, and the result is its gross profit, judged against a target: how far the takings fell short of what the food should have made, or went over it.

Two kinds of outlet with food

  • A Food outlet is a kitchen on its own: a restaurant, a café, or a kitchen stocktaken apart from its bar.
  • A Food & liquor outlet is a gastropub's bar and kitchen in one stock, counted together and reported together. See Food & liquor outlets.

Which an outlet stocks is chosen when it is set up, and stays that way. A food outlet is marked Food beside its name at the top, and in the list of outlets.

A food outlet's screens

The menu on the left is the kitchen's own:

  • Stock details: the stock's dates, opening stock at cost, VAT and allowances.
  • Stock count and Stock count check: the count, at cost, group by group.
  • Deliveries: each delivery note's total, ex VAT.
  • Takings: the weeks' takings, inc VAT.
  • Inventory: the kitchen's items, at cost.
  • Reports, History and Audit log, as for any outlet.
  • Kitchen settings: the groups, the target GP and the outlet's weeks.

There is no Till sales or Extended sheet: a kitchen has neither.
